CI wrote an article about coconut oil recently in their magazine but it was focused on coconut's performance and only a little bit on its health benefits.
To summarize:
Coconut oil is experiencing a comeback
Coconut oil may boost metabolism and strengthen the immune system as long as it's not hydrogenated
gaining popularity with vegans as a nondairy butter substitute
refined Coconut oil has no taste or aroma so they tested that instead of virgin CO which retains its strong coconut flavor
they made a batch or two (!) with melted Coconut oil in CCCookies and it performed just as well as melted butter but they missed butter's sweet dairy flavor. They also creamed it for cake and used it to saute carrots.
not practical for deep frying because of price
can use it in pie crusts with adjustments
