For those of you who liked the CI food science segments, and for those whose irregularity of diet requires extensive bathroom reading, I strongly recommend What Einstein Told His Cook. The book is a long series of Q&A-style food science articles, well-researched and amusingly written.

I don't reccommend it as a serious reference, though, simply because the system of organization in the book makes it hard to look things up. It's better to read in the WC or while waiting for the cooking timer to go off.

There is also a sequel. Book link: http://www.powells.com/biblio/6-9780393329421-2

I agree Fuz....I used to keep it in my desk drawer at work to try to help answer some of the questions posted on the OBB. But it is hard to wade through when you are looking for something specific.

Agreed! I bought it when I was in culinary school. Love this book!
