For those of you who love this recipe, Jim Leahy has written a new book "No Knead Bread Cookbook" which is on advanced orders at Amazon for $19.95. I just ordered it and can't wait to get it. I am hoping for lots of variations, since its the only bread I make these days.

Ilene,
Same with me. Last week, I made Pita bread and I mixed the dough up the night before and I let it ferment for about 18 hours. I rolled them out and baked them on a stone and they were very good.

Todd,

Mind you, if you want to make pita bread the regular way, it only takes about 5 minutes of kneading.

And isn't homemade pita bread about 1000% better than what you can buy in the store?

I received the book yesterday and it is wonderful. Very detailed description and step by step photos for the original recipe plus many variations from savory to sweet. The book along with a pot will make a great gift.

I just received my copy of this book. Looks like there might be some fun variations. I'll post when I get a chance to try something. My kids just keep getting sick and it really throws a kink in my daily plans!
