All Under Heaven: Recipes from the 35 Cuisines of China, Carolyn Phillips, 2016, Ten Speed Press
This 2017 James Beard Foundation Book Award nominee overwhelmed me. Although I was raised in many ways by my best friend and his family of Chinese origins and we ate a wide variety of Chinese foods, this book stunned me in its breadth and depth. Although there are over 300 recipes the in-depth research (history, ingredients, techniques, menu suggestions and tips) and enthusiasm make this a real joy to read. Who knew there were 35 Chinese cuisines????
Once again we have an author writing so well, contagiously in fact, that it often brings a smile and an impetus to get in there and cook. For me, living on the frozen Canadian prairie, ingredients are a big block but look out when I get to the ‘big city’ and some good restaurants.
I highly recommend borrowing this from the library before purchasing; it may be toooo much.
