They seem to be shallow fried, cooled, frozen, and baked from frozen. I think DH could handle a reheat (maybe...if he doesn't get distracted by Pawn Stars or some such thing). I wonder if it would work for fish?

In the meantime I've been really enjoying my beans. I wouldn't have guessed they'd freeze so well!

I've made Alina's beans many many times, they are a favorite in our house. I vac pac them in portions and freeze, and boil in a bag to reheat. Even my wife can do it :)

I've been slitting the bags open, propping them up in a cereal bowl to keep everything contained in the bag, and microwaving them. It works great! They are fantastic over brown rice. I put them into 1/2 cup servings (perfect lunch size with rice). The bags aren't pretty but they do the trick.

I'm still on my own this week, so tonight was tilapia and a chopped salad with kale.

Has anyone frozen brown rice? I've been using Uncle Bens quick cook (the 20 minute one) but would buy brown basmati if I could big batch cook it and freeze it well.

Ok, now that I have gotten over my annoyance at how some of the recipes are structured, I can see how quite a few of them will be tasty provided that I ignore the prep ahead instructions and either just make the dish and freeze the leftovers, or find a less awkward make ahead procedure. I also realized that many of the double duty recipes will work with leftovers I have in my freezer from previous chicken/turkey/beef roasts, so that's good too. So maybe it's better than I thought. I'll report back once I've cooked a few things.

So I've made a few things, and I'm liking the book a bit more. The pork tenderloin over apples was a hit as were the turkey burgers. Sadly, I've injured my foot so am not really weight bearing at the moment (I ignored a bad case of insertional Achilles tendonitis until it made me pay attention to it, so apparently I'm going to be in physio for a while before I can expect it to get better), so I haven't been cooking. DH has pretty much worked himself through my stash of pre made stuff in the freezer so I'm not sure what next week will bring. But for a while there I was finding that with a few modifications this was actually ok.
