Oh, I forgot to add -- this is basically pan-seared fish laid on a bed of lightly sautéed mushrooms, sprinkled with scallions and bread crumbed, then briefly baked.

It looked prettier in the book, probably because they used whole fish. The little fillets curled up at the edges, giving it that "bucket of eels" look.

My great grandson who is living with us for this school year is not doing well in French so I've been cooking from my French cookbooks for the past week or so hoping to pique his interest. Finally used Jacques Pepion's latest which I received for Christmas. Nothing fancy but I do like the way he presents recipes. So far a quiche dish and a roasted chicken.

I got some wild asparagus at the market this morning and I'm looking for a recipe for Asparagus fritata.

Did I say I have a new great granddaughter born March 28, Lili Grace? She's adorable - a dimple in her chin just like my dad and one in each cheek just like her mother.

I don't have a frittata recipe, but if you wanted to make risotto my sister swears by this one:

Yes, congratulations Fitzie! Love the name, my mother-in-law is also a Lilli.

After 5 days of REALLY good eating in London, I have pulled out "Moosewood Restaurants Low-Fat Favorites". I have had mixed results with this book in the past, but my half-assed self-imposed rules require recipes that I haven't made before so... fingers crossed.

Tonight I am going to make a vegetarian Thai curry, using curry paste I have frozen from that Salty, Sweet whatever cookbook. The curry paste is very tasty, so I don't think the curry can go wrong. I am also making a cucumber salad from the same book. Update later.

I was surprised, but that was really yummy. It was a mix of sweet potato, onion, pepper, cauliflower, snow peas and tomato cooked in a broth of curry paste, pineapple juice and water. I added some fish sauce and lime leaves (not in the recipe) and then put on some Thai basil. The pineapple juice made a nice sub for coconut milk. I had the leftovers for lunch wrapped in a tortilla.
The salad was also a bit different: cucumbers and carrots in lime juice, and fish sauce with some chilies, maybe a bit too many chilies, and cilantro. I have made something similar, only using vinegar instead of lime juice.
I am not sure what I will make next, there are some fish recipes that look nice too. I like that the calories are calculated per .... oz serving, keeps me honest.

I'm trying to imagine how pineapple juice could substitute for coconut milk.
