Post subject:  Moroccan Cookbook
I just purchased a Tagine and am looking for some good recipes/cookbooks for it. I have very little experience with this cuisine, but am anxious to expand, although I probably would shy away from whole ox heads or the such.... :lol:

I have "The Great Book of Couscous," and it covers recipes from Morocco, Algeria, and Tunisia. The title is misleading, since it has a lot of different recipes, not just couscous recipes, with about 30 of them using a tagine. It's a really nice cookbook with some good writing on the history and culture of the various countries. I haven't made any recipes from it yet, but it's gotten excellent reviews on Amazon:

Paula Wolfert's The Food of Morocco gets very good reviews.

This is timely for me. I also have a tagine I've never used, and we took a Morroccan cooking class last week in DC on vacation.

Here is a link to some of the recipes used in the class if anyone is interested. The food was good, the soup in particular I will make again.

I would also recommend The Food of Morocco as your first choice if you can afford the $$ and the shelf space. If you get this, you probably don't need other Moroccan cookbooks.

If that book is too expensive or too large, here's some others I've tried and recommend:

  • Couscous and Other Good Food From Morocco. This is Paula Wolfert's first book, and is widely available used for cheap.
  • Moroccan: A Culinary Journey of Discovery, by Ghillie Basan. Ghillie is a cookbook-writing superwoman, actually, and has multiple Moroccan cookbooks, including one exclusively on Tangine cooking.
  • The Vegetarian Table: North Africa by Kitty Morse is good enough that I would check out her other Moroccan cookbooks.

Note that I don't do tangine much because I don't eat meat, and the fish and veggie tangines are kind of boring.
