I have two that I use
Most favorite is "The Daily Soup", by Leslie Kaul and Bob Spiegel....everything I have tried was wonderful.
I also like," Soup's On", by Leslie Jonath and Frankie Frankeny, although I haven't tried many of the recipes...I also default to my favorite (above) most of the time.

I like 50 Chowders, by Jaspar White.

I haven't made too many of the recipes, but the ones I have were pretty fantastic. His San Francisco Crab "Meatball" Chowder is to die for.

I have the Dairy Hollow Soup and Bread cookbook, too. Particular favorites are Hillbilly Many Bean Soup, Hangover Soup, Black-Eyed Pea Soup-Stew with Arkansalsa, Gumbo Zeb, Cream of Garlic Soup, and Deep December Cream of Root Soup. The Split Pea with Caraway Adelle Soup is a great vegetarian split pea soup, a close second to CI's split pea with ham. It also has great stock recipes. I usually use her recipe for chicken stock and I really like the Browned Vegetable Stock, especially with a few shiitake stems thrown in. I don't make it very often (It's a little involved.) but the Golden Vegetable Stock is the best vegetarian substitute for good chicken stock that I've ever come across. The recipe for Rosemary Focaccia that I posted in another thread is from that book.

I just bought the soup and bread book. And I wasn't even looking for a soup cookbook. :oops:

Yeah, this is another vote for Soup & Bread. I don't have my copy anymore, but that's mostly because I copied out a dozen recipes from it.

Authentic Turkish cookbooks are also a good source of soup recipes. For people in a hot country, the Turkish eat a LOT of soup.

In the negative votes, 12 Months of Monastary Soups, despite being a cookbook for seasonal vegetarian soup, went on the "donate to library" pile.

Thanks guys, I will pass on that info. I also now believe I also need a soup cookbook. Sigh.

Nance, seems I cannot go to Cleveland without it being a heat wave (apart from tha time it was unseasonably cold). Great food though... including Jeni's ice cream in Chagrin Falls. Now, that is how to handle a heat wave!
