Some cookbooks I really love and use frequently but are never mentioned:

- Hugh Carpenters "Fusion", "Fast Entrees" and "Hot Pasta"

- Michel Richard's "Home Cooking with a French Accent" and "Happy in the Kitchen"

- John Ash's "Cooking One on One" and "From the Earth to the Table"

Does anyone ever use these? Any comments or opinions?

I love Michel Richard, and I have Happy in the Kitchen. He's a delight, as are his recipes.

Fitzie,

I took a couple cooking classes from Hugh Carpenter, but I don't have any of his books. Mostly it's that most of his recipes cover things I would already cook myself, without a recipe, so they didn't seem worth my scarce bookshelf space. He's a very good teacher, though.
