One of my grandchildrens' favorites: Saute one cup each of diced onion, celery and carrot in butter/olive oil Whiz one can drained rinsed white beans with 1 cup chicken broth in processor Add to vegetables Add 3 cups chicken stock Add 1 can drained rinsed white beans Simmer S&P to taste Remove casings from 1 or 2 Italian sausages. Pinch off about 3/4 inch pieces, flatten a bit, and saute in a little olive oil. Add to soup. The sausage should be a garnish, more or less. Top with cheese if you like. This is easy peasy and we all like it. It's a quickie, too. Fitzie |
