I have this pancake pan, just bought it- http://www.nordicware.com/store/products/detail/barnyard-pancake-pan/073D3ED0-279D-102E-91C0-0026B942890D think it will work okay with these pancakes?

Amy/Lynn, I freeze pancakes all the time and nuke slowly. are they as good as fresh? No. Do my kids still eat them on school days when mommy is NOT making pancakes? Yes. However, thinking about this pan maybe even I could manage that in the morning.... thaw in fridge?

You mean the batter? If so, yes, thaw in fridge, just pull out the night before.

P.S. As this recipe only has baking soda, you may not get the same rise you would with fresh batter. I would try it and see how you like it. If you don't get enough rise, you can add a little more baking soda to the thawed batter. It may take a little trial on error to get this just right.

Frozen pancakes reheat faster than frozen batter. We froze 4 leftover pancakes.

Don't disagree Pete, but as Jean pointed out above, reheated frozen pancakes aren't quite as good as fresh. Freezing the batter allows you to make fresh pancakes. Either way works, it just depends on what you're looking for.

Just had these reheated in the toaster this morning to rave reviews and once again my 82 year old MIL said, "Oh, I forgot to drink my coffee, I was so busy eating." We found them to be indistinguishable from fresh. They had been frozen for the past week and I thawed them on wire racks for 1 hour prior to toasting.

Hmm, some poor guy is trying to pay his college tuition the annoying way. Being paid to post functioning links is a big business and some go at it with a certain wild abandon. Usually the links have to have some sort of chance of persisting in order to actually earn the poster money, but sometimes just getting them up at all is enough. Oh well, time for Fuzzy to put the dampers on him.
