I was really sorry to hear about your column, Darcie.

It has been a terrible year for newspaper employees. Our local daily has outsourced printing, writing and is about to lose Chris Britt, a good friend and editorial cartoonist. Welcome to the future.

Sad, but true. Our local paper is small, but due to the way things are, they're trying to do a 1031, and are dying for a smaller facility. I'd donate body parts if I had a suitable facility. :mrgreen:

I never even got around to expressing my displeasure for omitting the weight measurements, so no. And i HEARD from one of my "kitchen inept" friends in WV that she loved the pancakes, so I feel better.

One of the reasons I was let go was because of the owner/publisher. She was on the board of the nonprofit where I worked part-time. I had a long history with the organization, so I was invited to the hoity-toity fundraisers held in one of the board members' $12 million homes, accompanied the board to dinner following board meetings, etc. This woman asked the President of the board why "the help" was invited to these affairs. When presented with a list of freelance employees to choose from in making the cuts, I'm sure it was not a difficult decision for her to make. ;)

My 82 years old, lives-with-us, MIL said, "The best pancakes I've ever had. They taste GREAT!" She cooked a million meals on the farm and was famous for her cinammon buns at harvest time. My darling wife said, "Great texture, flavor, and they don't get soggy. Best I've ever had."

I say, "Very unusual batter, thicker than I expected. WOW! Delicious! I cooked them in a large B&D electric skillet at 400F and they took twice as long as suggested but not a problem. I doubled the recipe and froze the rest. I believe this batter would work well in a waffle iron and will try soon. They end up about 5/8 of an inch thick!!

The photo is especially nice as it is -41C with the wind chill at the moment. That white stuff in the background ain't leftover whipping cream :lol:

Also, when we were finished, my MIL said, "Oh, I was so busy eating them that I forgot all about my coffee." There can be no finer compliment from this woman. :D

Is that sour cream or whipped cream? We like ours eith Scandanivan Delight Raspberry jam and sour cream.

The pancakes look divine!

They do!! I'm going to show them to Al, she'll flip out. All she wants for breakfast right now is pancakes and my Dad's syrup.
