Also known as National Pancake Day - only in America, of course...

By the far the bestest pancake recipe remains this on by Darcie:

Flip the pancakes gently so as not to deflate the bubbles that make them light and airy.
Pancakes Makes about 8 (5-inch) pancakes. Best to double this recipe and freeze left overs. Use 2/3 cup for waffles.

4 ounces cake flour
5 ounces all-purpose flour
2 tablespoons granulated sugar
½ teaspoon baking soda
½ teaspoon salt
1 large egg
3 tablespoons melted butter
1.25 cups buttermilk or soured milk
1 teaspoon vanilla extract (optional)
Try 2-3 teaspoons of grated lemon (subtle & excellent)
Try 1 – 2 T malted milk powder


MELT butter in a small bowl in the microwave and set aside to cool.
1. PUT all of the dry ingredients into a large mixing bowl and stir to combine.
2. WHISK the egg into the melted, but slightly cooled, butter.
3. ADD the buttermilk or milk and vanilla extract to the butter mixture.
4. STIR well to combine (the butter will make tiny clumps -- don't worry about these.
5. ADD the liquid ingredients to the dry ingredients all at once.
6. STIR with a whisk until most dry ingredients are moistened, but don't over beat (you will have a few small lumps in the batter).

HEAT a nonstick skillet or griddle over medium heat 375F is fine (when a drop of water just starts to sizzle, it's ready). With a ladle or measuring cup, scoop about 1/3 cup batter into the skillet and spread out if necessary. Wait until bubbles start to form on the surface of the batter, 3 minutes. Peek under the pancake to make sure it's brown enough, then gently turn it over and cook for another 2 minutes, or until browned on the bottom side. Adjust heat as necessary.

KEEP cooked pancakes warm in a 200-degree oven while making the rest.

The pancakes eaten on shrove Tuesday in the UK are closer to crepes. It’s also just about the only day they do pancakes.
