... these are increasingly available now from a variety of sources. They're kind of a pain because of the long cooking times (12 hours soaking, 2-3 hours cooking), but I've never served them and not had people rave about them.

I love these too. The Greek recipe you listed said these had a fast cooking time though. Is it all the same bean? We had them the other night at our cooking club and they were very good.

I usually do the quick soak version on beans (bring to a boil, let sit an hour, drain and proceed from there).

I should have actually read the recipe. I can't imagine the instructions working. The Epicurious recipe is more plausible, but be prepared to cook them longer.

I make them by soaking overnight, then tossing with olive oil, tomatoes, honey, dill, onion and stock, and cooking in the oven for 2 hours.

Contrary to the advice on GreekRecipe, I've found it completely impossible to overcook these beans; I've cooked them, frozen them, thawed them, cooked them again for 1/2 hour in the oven, and had them come out great.
