I found my new favorite bacon. Jowl Bacon from Ebells. I sliced it on my slicer about 1/16th of an inch and pre cooked it slightly in the oven for my Bacon Wrapped dates. I tried some of the smaller pieces and I love this stuff. I think it's the texture that makes this Bacon so good. I want to say it's less gritty than regular Bacon. Good stuff!

I haven't cooked mine yet. I am going to slice it and put in the oven too. Everytime I open the freezer and see it there I am reminded I need to try it. I also thought the smaller ends would work good in a pot of beans. As soon as we get back from vaction the end of January I'll give it a try.

BTW: I haven't seen it at Ebels since we bought it that day. I'll keep an eye out for it. And the tenderloin was great!
