In the US and Canada, you may see an Alaskan fish called "arrowtooth flounder" for extremely low prices at your local fishmonger or supermarket. Do not buy this.

While the arrowtooth is a fine example of a flounder while alive, after death it is an inedible mess. The fish contains an enzyme in its flesh that, if activated by heat, will behave as a meat tenderizer and turn it to fish pudding. There are claims online that soaking the fish in acid (like lemon juice or vinegar) will prevent this disgusting phenominon. This does prevent the fish from dissolving in the pan entirely, but it's still not good; rather, the fish will be mushy and flavorless.

Anyway, the Alaskans have a serious surplus of arrowtooth this year (the majority of the catch are sold to become fish paste in Japan and China), so you may see it turning up at your local. Stay away!

(and I'll pat myself on the back for having the foresight to buy some frozen sole and not depend entirely on a strange fish)

That's funny - as I was reading the first part of this, the first thing that came to mind was that fermented fish paste of SE Asia.

And here I was thinking cookies (and was wondering if the warning was about the founder of the company - like maybe he’s the Harvey Weinstein of cookies or something). But then I realized that this would be Arrow*root* not arrowtooth.
