We decided to make Smitten Kitchen's spaghetti squash tacos[1] for dinner. I did a quick Google search for cooking times for the squash, and stumbled across an alternate spaghetti squash baking method[2], where instead of splitting the squash in half, you slice it into rounds.
I was interested enough to try it, because I've always had issues with the traditional method. First, some portion of the squash will be overdone and mushy by the time all of it is done. Second, it's hard to check if it's done because you can't easily flip the halves while they're hot. I'm happy to report that this new method solves both problems.
