So ...

We decided to make Smitten Kitchen's spaghetti squash tacos[1] for dinner. I did a quick Google search for cooking times for the squash, and stumbled across an alternate spaghetti squash baking method[2], where instead of splitting the squash in half, you slice it into rounds.

I was interested enough to try it, because I've always had issues with the traditional method. First, some portion of the squash will be overdone and mushy by the time all of it is done. Second, it's hard to check if it's done because you can't easily flip the halves while they're hot. I'm happy to report that this new method solves both problems.

I've really enjoyed playing around with baked stuffed spaghetti squash. You do need to precook it in halves, though. The shells stay nice and hard, unlike other squashes, so they're easy to refill. Epicurious has an article with a few recipes, but I just took the outline and ran with it.

Good, we like those. This isn't our first time making that recipe.

I need more vegetarian/vegan recipes in my life, so I will definitely be trying these soon. Thanks!

In the summertime, charred corn tacos are awesome.
