Post subject:  San Marzano diced tomatoes

Whole Foods now carries san Marzano diced tomatoes in the standard lined can and now in a box. I've not seen or tasted the latter. Has anyone cooked with them?

The ingredients are a bit different:

The canned tomatoes contain: diced tomatoes, tomato juice, sea salt, calcium chloride and citric acid.

The boxed ones contain: tomatoes, tomato juice, tomato paste and sea salt. Certainly sounds a bit more flavorful.

I'm sure there are differences in how they are processed, particularly with regard to heat.

Any thoughts on why the boxed version was made in the first place and when they might be a better choice in a recipe?

Happy New Year!!!!

Without the calcium chloride, the boxed ones should be better at 'melting' in a sauce.
