Post subject:  Anchovies

The Tagliatelle thread got me to thinking about anchovies and wondering how you all store the remainder of the container after using just one or two?
Previously I've just put the rest in a ziplock and then in the deli drawer of my fridge but when I run across the bag sometime later it's turned to mush. Can I freeze?

I put leftover anchovies in a 4oz. Mason jar and add a little additional oil. They are highly visible on my fridge door shelf that accommodates shorter jars. They do not last long in my house.

They would probably work better frozen if they were vacuum packed. Ice fishing for anchovies is difficult and potentially dangerous. They have a tendency to swim to the bottom where they can hide until the freezer is cleaned out.

I buy anchovy paste and avoid the whole whole anchovy and related storage issue.

We buy 'em in a 1 lb can in the Italian Market in Philly. The can comes with a plastic lid. In the fridge the oil solidifies and the anchovies last for a couple of years.

I also go for the paste after an oily, fishy mishap. I used to just store the remainder in a container to throw away at a later date.

Following -- I believe it was -- Fuzzy's advice, I purchase salt-packed anchovies, and have been very pleased with the results. I put them in a container in the fridge, and they seem to more or less keep indefinitely.

This is what I do, except I put them in a pint mason jar. The anchovies in the large cans seem much better than those sold in the small cans. They never turn mushy on me, even as long as it takes to use that amount.
