Thanks for all the input, guys! I'll be on a razor-thin cookie budget again this year, so the cajetas will be out, though I'll be remembering it for some less strained time of year. I'll probably do the Alton Brown recipe, which appears to be pretty much the same as the Emeril one. I might do a condensed milk version for comparison. I can always use it for stirring into coffee drinks or hot chocolate if it is too sweet.

I've made it in the can as Jean mentioned but never from scratch. Now I have another project to try! Thanks!
