Socca
In Nice where socca are sold as street food, they are thin and crepe-like. Due to the difference in the chickpea flower and cooking technique, here they are more like pancakes - crispy outside and tender inside with a slightly course texture.

Makes 12 servings
2 cups chickpea flour
1-1/2 teaspoons salt
3/4 teaspoons ground cumin
2 cups water
1/2 cup plus 9 Tablespoons extra-virgin olive oil

Preheat broiler. Combine flour, salt and cumin in blender. Gradually blend in 2 cups water and 1/2 cup oil. Blend until very smooth, about 1 minute.

Heat 3 tablespoons oil in a 12" diameter non-stick broiler-proof skillet over high heat. Swirl to coat. Pour 1 cup batter into skillet. Cook over high heat until golden brown on bottom, about 3 minutes. Transfer skillet to broiler and cook until brown and crisp around the edges, watching closely, about 2 minutes. Slide onto baking sheet. Keep warm in oven. Repeat two more times. Using a large spoon, cut into irregular pieces and divide among 12 plates. Sprinkle with salt and pepper.

Note: I have two cast iron griddles, one 7" and the other 10". I use the 7" for crepe type soccas and the larger I cut into pizza style slices. For the crepes, I chop tomatoes, onions, cucumbers and black olives. Add a bit of vinaigrette and feta. Place about 1/2 cup on crepe and roll up or fold in half. I've been known to eat a larger one by myself while waiting for the next one to come out of the oven. A little Pernod is very nice with these.

Thanks! I have been in Nice a couple times and do not remember seeing this. Must have been on the wrong street!

I've never been to Nice so I can't say. The article is about a Nicois family lunch where these were served. They are served all over the Mediterranean. Or so I've read.
