Alina,

Well, I've never had ricotta salata last more than a month in our fridge (it tends to disappear, somehow).

Raclette is nice; it's quite mellow & moderate for a soft French cheese. Next time, order some, even if you haven't been able to taste it yet. It does NOT keep very long, though, so don't order a lot.

Thanks Josh. I lost track of mine, slipped behind some bottles, that is why it lasted so long. I thought I had some, but when I did not see it assumed DH put it in his salad. Then months later I found it and it was gone is a week. Hence the lb. order this time. I expect I'll be ordering more stuff so I will try the raclette.

Josh,

As you asked for a review, I'll say Minus 8 vinegar is amazing. It's very sweet on its own, but when paired with a citric acid is amazingly complex. I've only tried it with cheese/baguette (and homemade bacon) so far, but really look forward to trying it with proteins like meaty whitefishes and steak.
