One of the better grocery stores in the area has some fresh Morel mushrooms. I know this is a silly question, but can I assume (yikes), that these are cultivated vs. someones random wild gathering. 30 years of working in a hospital and seeing so many bizarre situations, I have gotten a little paranoid over the years. I do not know the regulations for groceries, but I think I should learn more.... Thanks and don't snicker too loud Karen

Morels are a spring mushroom, so depending on your area, they may be wild gathered. Morel season for where I live isn't until almost June, but I live at high altitude.

As I re-read my post , I realize it doesn't make much sense. I am a little concerned about the toxic look alike variety accidentally getting into the grocery store. I don't know if wild gathered items are inspected, regulated or even permited to be sold in grocery stores.....

I've never seen them in grocery stores here but they are all over our City Market when they're in season. Grocers here tend to think if you can't supply all their stores for a season, they'll go to someone who can and therefore don't carry things like morels. Silly boys,

And, it depends on where you live as to the regulations regarding inspection.

Just Wondering, karen Karen, The look alike variety is easy to identify and separate from real morels. Even beginners can tell the differences; solid bodies unconnected caps, irregular shapes. Most grocers sell the gray varieties that are cultivated. Tim ps: Chantrelles are a different story but I am not aware of any documented case of a grocer selling a toxic mushroom.

I hope that is Ina's recipe which is one of my favorite things to eat. I would suggest doubling the sauce, it is good enough to top pasta on its own.
