Need help again. Ran out of brandy. So what would be a good brand to use for baking and cooking? I do have a bottle of Hennessy cognac. Could I use that when recipe says brandy? I also want to make the Japanese Chicken from this month's C@H which has Vinegar Rice as a side dish. I don't have any sushi rice. Could I use Valencia or Arborio which I do have? Thanks so much. |

While different, you won't notice it in cooking so, yes, go ahead with the cognac. I do recommend trying it first |

I'd probably go for the arborio, but any short grained rice would sub. The texture will be a little different, but it will taste fine. Amy |
