Thanks very much, Dave. I'm down to just a few bags of KAF AP in my pantry so was getting worried that I'd get too low on flour before they ran another special. (Anything less than 30# of both sugar and flour in the house is totally unacceptable as far as I'm concerned :D.)

Great! You'll really like that flour. Incredible flavor, sort of like that French KAF. Lower gluten than even KAF AP, and it results in an extensible bread, so it doesn't retract as you are trying to stretch it out. I have made good sourdough and yeast breads with it, and have gone through well over 8 lbs of it (might be over 10 lbs now).

Just wanted to circle back now that I've tasted something made with this flour. Today I made identical batches of the Artisan Bread in 5 master recipe, using KAF A-P and the Honeyville Artisan Bread. Same size loaves, same baking time, etc. I cut both loaves, and after one bite, my 17 y.o. daughter, who didn't know which was which, exclaimed "This one has SO much more flavor!!!." My opinion was the same. And...drum roll.... it was the Honeyville loaf. So despite my general loyalty to many KAF products -- it's Honeyville now for me. Thanks Dave!

Good to hear you all liked that flour so much! It takes a while to get used to, as far as how it handles (needs more kneading, and less water), but the flavor is great.
