Post subject:  Liquid Yeast?

I noticed this in the grocery store around Easter and now it is back with the Christmas baking goods. Ever seen this? I know I must need it but what are the advantages? I can also get fresh yeast throughout the year but never know what the advantage is.

The answer lies somewhere between "yeast is yeast and it is all the same" and "xxxx yeast is far superior to any other yeast on the market and you absolutely need it to get the best flavor and rise."

I believe that my best results come from using the same yeast every time and becoming so familiar with its baking and rising characteristics there are never any surprises. Sort of like a marriage.

OTOH, a casual dalliance now and then can be exciting.
