I know a few people who like everything extra salty (or who smoke, or have other issues that dull smell/taste) and have come to learn from experience that the seasoning tastes of others will almost never meet their need....hence the salting before tasting. Salt is such an individual preference that no one palate is going to fit all. I don't have a problem with it. In fact I'd be happy if restaurants pulled back a LOT and just let us adjust to suit as a matter of course. Would save me the salt hangovers i get from eating out!

It's not so much a preference as a matter of accustomization. That is, if you consistently add salt to your food, you gradually lose your ability to taste salt, and have to add greater and greater amounts in order to be satisfied with the balance of flavors. One can, with determination, reverse this. There's also probably a genetic component.

For that reason, it is completely impossible to salt food to the taste of any large group of people, something the no-salt restauranteurs should consider. On the other hand, I also know people who dump a teaspoon of slat on anything they eat before tasting it.

Medications can also affect your taste. When my dad went through chemo, he dumped a ton of salt, worcestershire, and tabascco on everything before tasting. He said it was all he could taste.

One of my favorite local Italian restaurants W-A-Y under salts their pasta water. Unless I heavily salt it it has no flavor whatsoever.
I'm with fitzie, I love salty foods.
