Well, I ended up with a used Mauviel 2.5mm saucepan. Well, it is coming in the mail. I look forward to giving it a try!

Been giving it a bit of a go-around. Used it to make some fig-balsamic jam, where I think hotspots would have been a real PITA.

Tasty too! Looking forward to putting some of this in a pork loin...

Also made hollandaise in my wee AC SS Saucier (direct heat method) the weekend. I am sorry I bought the AC now, a copper would would have been *perfect* for that application, and not much different in price with careful shopping.

I got it off eBay; probably could do a little better if I had been patient (the next one!).

The tricky (very) bit about mauviel is that it comes in an enormous range. From my (pretty) careful research the best indicator (it seems authoritative) is the cast iron handles; they only appear on the pro stuff, which is the thickest. The thinner stuff, intended for 'tableside', etc. and not for real cooking, has "prettier" handles. There is also a ton of williams sonoma mauviel there, but I have no idea as to its specs so I just includ -williams in my searches :)

In the words of Mauviel: "Pans with cast iron handles are 2.5mm thick copper. Pans with stainless-steel handles are 2mm thick copper.Pans with bronze handles are 1.2 to 2mm thick copper."

Note that 2.5 is actually 2.5-3.

There is also falk culinair, whose prices at "new" are better then average, though still not cheap by a long shot. How ever did Revere make my copper bottomed pot so cheap? :mrgreen:

I had to read the entire thread to figure out how a thread called "Crystal" was talking about copper pots. I thought the world had gone crazy.

Great pot Paul. I think it needs to make a visit about 4 hours east of you. 8-) That may bring me back to ebay, I try to stay away from the temptations there.

And Harrison is 5'9"? Wow, he's just a year or 2 older than my oldest, who is no where near that. I still sigh though that I don't have to bend over to kiss them, can't imagine looking up!
