Ditto re the above - no handles since the disc goes in the jar, on top of the veggies. The brine is then poured in to cover everything (over the edges of the disc) and the jar is then sealed.

Actually, for sous vide weights it seems like you need a large disk with a cutout on one side, no? The difficult part is figuring out how large the cutout needs to be, esp. since I don't have a circulator.

I don't understand why the need for a cut out. I use a variety of vessels for sous vide from a huge rectangular cambro to a DO. I sometimes put a rack on top of the items that are too light. But not everything needs to be weighted. There's a picture of my tipycal set up here.

I would love to have one that is 3 - 3.25 inches, with the little handle. I think that would work best for pickling in my clamp-top jar.
