My name is Barry and I live in Central Maine where it is about zero right now, we need comfort food to keep us warm. For years I frequented Cooks Illustrator forum but not only is is closing down but it has been taken over by Spammers. Someone suggested I try this forum thinking I would like it here. Al though I am 66 I am still full of questions. Having been cooking for nearly 60 of those years. My mother had a couple of good specialties but aside from those she wasn't a very good cook so cooking became a matter of survival. Recently we are trying to eat more vegetarian, although we do still eat meat but less often and less of it, trying to stay as health as we can, for me it is a loosing battle I have not quite one lung and liver disease and if it were not for myself and my wife trying to keep me alive I would have been gone a long time ago and the Doctors at the VA are great. At least for the moment while they still have funding.
A long with asking a lot of cooking questions I will always post a new recipe I have found that I think will be valuable to members of the group. I will also on occasion tell people about a product that I find especially helpful, like the Ninja Stick Blender that also is a food processor, love it.
We really like Thai food, I have a couple of the recipes down, I make an acceptable if not totally Authentic Pad Thai and my fresh spring rolls and sauce are exactly right, I also have learned lately how to make wonderful Thai Coffee, which is really Southeast Asian Coffee, Thai and Viet Nam food over lap a bit, sipping some right now, yummy. What I am looking for is a good recipe for Lemon grass soup and Hot and Sour soup. I like Thai soup it doesn't have a lot of things floating around it it, what I really like about soup is the broth. I make a lot of cream soups where my Ninja really shines.
Waiting for the Superbowl and made some salsa, salsa is something that until today I have yet to make a good one, I am hoping that Alton Brown's recipe will do the trick and I actually bought Jalapeno peppers which I can also use in my Tempeh Fajita. Also I have a new recipe for thin crust pizza that we like quite alot, lately I have stopped putting all kinds of things on it and just make plain pizza, like what I got as a kid on Rivera Beach, the best pizza ever.
Okay, just thought I would introduce myself and then see if I can navigate the site to get the most out of it.
