Wow, that is pretty intense....where does a chef go from there?
I was fortunate enough to be in the audiance when he did a guest class at Johnson & Wales here in Denver. He was very gracious to the students helping him with his demo.
This week's Newsweek has a feature on TK, but I haven't read it yet.

Interesting write up. It was a bit tacky to invite someone to cook and then not let them. Surely the author could have been allowed to do a bit more.
Not a kitchen I ever wanted to work in.
