I just sent my EC an email asking him if he's going to buy it. :mrgreen:

I'd love to see how they use the PacoJet...I use one at work, and I believe we are really under-utilizing this awesome piece of equipment.

There's an interesting thread over at eGullet about this book, and about cooking from the book. Ruhlman's review touched a few nerves. This book is definitely not for me, but for those wanting to delve into revolutionary new ways of cooking and looking at cooking methods, $500ish doesn't seem ridiculous. We spend that much in a few months of restaurant meals.
