I found a basic kit of molecular gastronomy stuff at T.J. Max last week, and yesterday played around with making chocolate spaghetti. You make a mix of milk, chocolate and agar-agar, then use a syringe to fill tubes with the mix. Let it set in a bowl of ice water, then use the syringe to force the strand out of the tube. It was interesting. Not hard to do, but the kit only has three tubes. Using an entire recipes' worth of the mix would take all day. The strands were too soft to pick up by hand, but tasted ok. After a few rounds the strands started breaking as I was releasing them. If I had twenty tubes it would have been pretty easy to bust out the whole batch.
Can the gel be reheated and reused?
When I checked out the Modernist Pantry site, they stopped carrying this particular brand because they had issues with the quality, but like I said, I got it cheapish.
I think I will order some more chemicals,naps the kit only came with four. There was both a cookbook and a cd of recipes. Strangely, none of the recipes give any yield.
Are any of you playing with this stuff beyond mac and cheese?

Becky I have a couple of kits, but have not used them yet. I did see a recipe for beet caviar that looked fun. I could not fine that one quickly but here's a link to get started. Hope this helps
