Has anyone tried the method used for carrots in the pressure caramelized carrot soup on beets? I want to caramelize beets for dinner tonight and they take a long time, so I was thinking of trying the pressure cooker method and then putting them under the broiler to dry out a bit.
Anyone have any recommendations?
