With all deference to Frank and Lou, I think barbeque is about to get a makeover. We are doing pulled pork (as part of a pork "two ways" item) at the restaurant with a combo of smoking and sous vide, and I'm now trying the same thing at home with ribs. Paul has done the ribs before (and is doing them right now as well, I believe), and I'm excited to taste the results in two (yes, two) days.

Here are the ribs going into the water bath...

Okay, I knew you guys wouldn't like it, but what if it ends up tasting (gasp) better than what you can do traditionally? Hmmmmm?

Interestingly, the cryovac package started to float, so I cut it open and split the slab so it would fit into two vac bags. This also gave me an opportunity to trim the ribs and season them with a rub. They are now happily re-ensconced in their bath.

I do something sorta like you, I do the traditional smoke I then vacuum and freeze, I heat up the ribs or brisket or whatever in hot water in the vacuum bag, I put back on the grill or under a broiler to recrust it. Works pretty good.
