Folks, In a bizarre turn, avante-guarde-food-loving SF top critic Michael Bauer has written a piece attacking sous vide. This is entirely off the wall given the number of sous vide meals Bauer has eaten and praised over the last half decade. I don't think he's damning sous vide, simply damning lazy chefs who don't know how to properly cook in this manner. Sous vide is an amazing technique when used correctly, and he's correct that it's become so trendy, many chefs simply use the equipment without really understanding which applications work and which do not.
