Amy - I was just getting ready to compile some questions for those in the know: Any knowledge or experience with the Berkel vac pack 250??

Are you kidding?! It's over $4K!

Try the VacMaster instead. It's the one I own (and I believe Paul as well). It's a smaller version of the one I use at work.

Yes, I have that model as well (the VacMaster) and am very pleased with it. The 215 can pull a little more vacuum and takes boiling better, but is significantly more and the 210 can easily boil room temp water (or cooler) so I don't think absolute vacuum matters so much.

If you look hard enough, you should find someone who will ship it to canada. Or, you can do as I did and go to your local supplier and bargain really hard. I did it hard enough that he chased me out in the parking lot when I rejected his "lowest possible offer" and we came to a middle ground :) Not $900 low, but I didn't have to pay for shipping or take on risk either. Or, if you cross the border in a vehicle often-ish, ship to the US and pick up. It is too heavy to fly air. It is too heavy to put away, as well, so plan its position....

I also bought a boatload of high-temp bags. Would need to look up from where, but they are cheap and yah, you figure, who needs 1000 of each, but turns out you can use them at a fair rate. It'll only be a few years before I'm buying again. I bought those from a US dealer and popped over the border to pick up.
