Post subject:  SV Baby Turnips

I've been doing SV baby turnips (that time of year, especially around here), ala Under Pressure. These are really really good and don't even have a hint of those turnips your mom fed you.

Totally worth a try. Basically cut them in quarters, peel, cut off sharp edges, toss with some duck fat and a pinch of salt and sugar, bag, sv @ 85C @ 35 min, chill, reheat by glazing (put in pan with a bit of stock, heat till stock disappears and turnips glaze). I've even put them (cold) in salads. I never knew turnips could be so good!

I'll have to give this a whirl. Never been a huge turnip fan, but given what SV does in terms of other veggies, I totally get where you're coming from. Thanks!

We had a wonderful sv turnip bisque at a new restaurant a few weeks ago. They used quite a bit of garlic and garnished with Spanish shrimp. You are exactly right about Mom's turnips.

What temp do you suggest for cooking the turnips?
