Paul,

I stumbled across this website and immediately thought of you. They're French Canadian, so if you need any modernist ingredients, this may be a good source for you.

Some interesting ideas here and there in their recipe section, but definitely not for those who need a true tutorial on modernist techniques. They simply don't give a lot direction beyond the base component.

Ohhh, thank you very much, a Canadian source is really great. Very nice website, too. I wonder if they have a retail presence; I'm always up for a trip to Montreal. I'll have to give em a call.

I got this kit as a present about 3 weeks ago and just recently, had my first venture into modern mixology. I think because of some errors I made, it wasn't particularly successful - although for better or worse - we drank our disaster!

So I tried making a screwdriver - which was supposed to be this stunning drink consisting of alternating layers of OJ and Vodka, served in a wine glass.

Briefly, OJ is added to a gelatin/caster sugar combo which is then blitzed with an immersion blender. And vodka is added to a gelatin/caster sugar combo which also gets mixed with the immersion blender. Both sit for five minutes and then the gradual process of creating the drink begins: put some OJ mix in a wine glass - put it in the fridge for 15 minutes - form the next layer by adding the vodka mixture - put the glass back in the fridge for 15 minutes - then back to the OJ mix and wait 15 minutes.... you get the picture.

While my OJ mix was a success - I think I should have left it in the refrigerator for about 30 minutes until it set more.

As for the vodka mixture - that was a different story. While it developed some height when mixed, it quickly dissipated. It looked kind of cloudy thereafter but I'm not sure that it did what it was supposed to. I wondered whether using vodka from the freezer was the issue. Next time I'll use room temperature vodka. Also, next time I'll definitely make sure that the OJ mix to which it is being added has jelled a little bit more.

But as I said - we enjoyed the results even though what came out was a far cry from what I we were aiming for!
