What do you think of this? http://www.cookingissues.com/2010/08/11/infusion-profusion-game-changing-fast-‘n-cheap-technique/

I have an unopened whipped cream siphon that my mil won sitting in my basement.

I don't seem to be able to make links from my iPad so please cut and paste. :(

Oh and my mil won it by filling out a crossword puzzle, not by sitting in my basement. You can't get jack shit by sitting in my basement.

I would love some recipes and ideas how to use this. I don't make whipped cream enough to have ever bothered with it but booze and foam... talk to me.

Mary,

I use it for a variety of applications, e.g., classic and modern sauces, mousses, etc.

Heck I once made a bbq sauce foam for a smoked pork dish. Anything that can benefit from a "lighter" version is worth a shot in the iSi. The biggest experimentation is usually how many cartridges you need to achieve the desired texture for any application.

Thanks Amy. I guess some experimenting is in order. And Becky, if you make it to the front door dinner is yours.
