"Sous Vide BBQ" and "smoked bbq" are definitely apples and oranges, though to be fair, I know people who like apples and don't like oranges (and I like both, but prefer oranges), so it is still fair to compare them.

I note Modernist Cuisine has a lot of recipes which are smoked at very low temps (150 F, basically cold smoked) and SV'd. I've not tried that; my WSM won't work down in those ranges. I'm looking into getting a rig which will (maybe with controlled humidity too). That'll give you the smoke ring. However, I would imagine the texture differences would still be quite strong.

I quite enjoy them both.

omg...I've got to say those were some of the best ribs I've ever had in my life. Sorry to traditionalists, but sous vide is perfect for cooking them, and my Smoking Gun gave exactly the right level of smoke. I'm in heaven...

You've just let the cat out of the bag for "cue" for a party. MAKE-AHEAD! Do you realize for the 1st time ever, we are off late August for a TWO week vacation at the beach? I thought not, stole flapping. :D I could pinch your cheeks! My fam coming for few days, so is Rod's. I can't quit grinning. Beach party, no fuss, no muss, on vacation!

Cheap indeed for them. Andy joked it's just an expensive shooter.

I put the ribs in a large Tupperware and shot smoke into it periodically for about 45 minutes. Rebagged the ribs, put them back in the bath to reheat as I had shocked them when they came out of the SV about five hours earlier. They went into their reheat at the end of cooking some corn on the cob (btw, you are so right about how good that is), then finished with sauce under the broiler.

Is the smoking gun, from PolyScience, available in Canada? I was going to be in the USA in January but ... Thought this would make a good Xmas gift from me to me.
