Frozen kernels, allowed to thaw some. Vac packed with a goodly lump of butter, S&P. 60 C for 30 min.

I was quite surprised; it had much more of fresh corn flavor then I would have expected. A pleasant surprise, I'd suggest trying it once to taste it. It is nice at a common cooking temp too...

I've done carrots, butternut squash and fennel SV (all of which are excellent this way), but not corn. On my list for this week! Thanks Paul.

I've pretty much done it the way Keller does it (page 125), except I go at 180 degrees.

Ok, I've done the fennel ala Keller a couple of times now, and it is extremely good. Thanks for the pointer! Had it last night with Keller's braised short ribs, some lightly braised Kale and new potatoes (reaaal tiny ones) tossed with butter and parsley.

Also, I deployed a new torch for the ribs, the Iwatani, and was quite surprised at how much more powerful it seems to be over propane. I did not expect such a difference, unless it was all in my head.

Correction: I don't think it was Keller's ribs, I think it was from MC. Think.

Butane is more efficient than propane, so it wasn't all in your head.
