Before embarking on a journey to make this cake a little bit more "Cook's Country" and a little bit less "Sandra Lee", we decided that we had to make the cake "as written" to establish a base line for further research.

After making it and deciding that it is already perfect, no further research is planned.

Jesbelle, that was the one pie my mother made and we still all love it. Her version was a premade graham crust and filling made with *gasp* RealLemon, Cool Whip, and sweetened condensed milk. I still make one occasionally with a real graham crust, fresh lemon juice, sweetened condensed milk, and actual whipped cream. It is wonderful and nostalgic.

Mix together first five ingredients. Fold and nuts. Pour into greased and floured tube pan. Bake 1 hour at 350 degrees.

Frosting:
1 Envelope Dream Whip
1 small package pistachio pudding
1½ cups cold water or milk
4 oz. cream cheese.

Mix, whip, and frost cooled cake.

The good news is that Wegmans still carries Dream Whip. The bad news is that Rita has fond memories of this cake and wants to make it again.


I have this recipe, but it the one I have uses 7-Up and it's called "Watergate Cake." Don't know why, though.

a quick glance at the Google suggests that the cake had the (mis)fortune of becoming popular around the time of the scandal :ugeek:
