We were pawing through some old file folders for dessert ideas to make for dinner group this weekend or small dinner party on St. Patrick’s Day and came across this gem from the 1980’s.

Pistachio Champagne Cake

1 Duncan Hines Deluxe cake mix (white or yellow)
1 4oz. pkg. pistachio pudding
4 eggs
1/2 c. vegetable oil
1 c. club soda
1/2 c. chopped walnuts or pistachios

Mix together first five ingredients. Fold and nuts. Pour into greased and floured tube pan. Bake 1 hour at 350 degrees.

Frosting:
1 Envelope Dream Whip
1 small package pistachio pudding
1½ cups cold water or milk
4 oz. cream cheese.

Mix, whip, and frost cooled cake.

The good news is that Wegmans still carries Dream Whip. The bad news is that Rita has fond memories of this cake and wants to make it again.

Well, start with a nice yellow cake with pistachios, then make some pistachio paste and go to town! I love the idea of using club soda for champagne.

Anyone remember Bacardi rum cake -- with cake mix and vanilla pudding. Really daring in the 60's. I'm really tempted to make that someday.

Oh my gosh, I actually like that cake. We make a few modifications . . . divide the batter in half. Add chocolate syrup to half, green food color and mint extract to the remainder. Marble into a bundt pan. Our family version uses a chocolate glaze, rather than the frosting. Haven't had it for years, makes me want to make it again, maybe for St. Pat's Day.

Lindsay, I do remember the Bacardi rum cake. I think I like that one too.

There's plenty of those nostalgic old recipes that I like, and never make them anymore.

I remember the pistachio cake, my mom used to make it. Also loved it. It would be interesting to taste that stuff again. I even liked that pretzel jello stuff.

Although I am a product of the "convenience food" generation, my mother and grandmother didn't buy into it, and both were amazing cooks. (Except my grandmother tended to overcook meat...we rescued many roasts from her oven.)

The one "constructed" thing I do remember eating as a child is something I still have fond memories of...we called it "green stuff." It was a lime jello mold made with cream cheese and pineapple. I actually made it for Thanksgiving about 10 years back, and Andy looked at me like I was crazy.

Ah, the memories of youth...

My mom makes Lemonade Pie -- graham cracker crust, frozen lemonade concentrate, cream cheese, and Cool Whip. I've grown to hate the greasy mouthfeel (from the Cool Whip), but I still love the flavor.
