Now you'll have to bake another experimental loaf! LOL Maybe add a little gluten to it (OMG, imagine that! ), so it will rise better than regular rye, and get to the top of the pan? |

Dave, It did get to the top of the pan, but just didn't fill the corners completely. (I'm being overly picky.) I just sliced into the loaf, and the crumb is perfect! I'm using your rye for three separate events, and so, I'll be making more next week. Thanks so much! Amy |

I've been wanting to make this again but have great difficulty in finding rye flour of any type other than Bob's red mill in itty bitty bags. I finally found a mill about 2 hours from me that mills rye and they pointed me to a distributor in my area, more or less. So am picking up a 20 KG bag sometime this week. It will be a few weeks before I can make it but will report back. I want to find a pullman pan as well, would be an easier sandwich bread that way. |

That flour will need to be stored in the freezer, unless you plan to make a lot of rye bread. |

For future note I now live 40 min drive from Bob's Red Mill. They have bulk pricing on stuff at the mill. |
