Bialies:

This was largely due to having read most of The Bialy Eaters by Mimi Sheraton. According to her, the bialies made by bagel shops use the wrong dough and are totally the wrong texture. So I followed her "recipe" (it's a 19th-century-style set of instructions taking about 8 pages) and got these.

They are quite tasty, and quite unlike the bialies I've had before. The texture is quite different; they're tough and crunchy on the outside, and spongy and chewy on the inside. I don't know if my version is anything like the authentic Polish article, but they are good. I think I need to flatten them more, though.

They are also less mess than bagels, so I think I'll make them again.

I am impressed...they look great. One of the things I miss, not living in the east anymore, is bialys. I always preferred them over bagels, I think because of the little crispy onions ans soft doughy centers. Yours look pretty authentic, except that they are not as flat.(as you mentioned)
Makes my mouth water for a bialy and white fish salad spread.

Fuzzy, those are good lookin". Living in MN, I'm not sure we get a decent bagel, much less a bialy. I'm guessing the bagels at our chain bagel shops are nothing like the real deal.

Depends: do they boil them? Ask. If they boil the bagels, they're probably doing the other things well enough to be considered "authentic".

Ooooh ... whitefish salad. Can't get a decent one here in SF, except by making it yourself, or going to a Russian deli and risking food poisoning (I'm 3 for 8, which is why I don't go to the Russan deli anymore).

Anyway, I'll try shaping them differently next time, and see if I can get the right shape.

You can't get a decent bagel in KC anymore. They are all huge and puffy, not at all like they're supposed to be. Calvin Trillin is from KC and on a visit his little daughter asked him why all they bagels taste like white bread. And they do. Sad to say there isn't a deli anywhere in town anymore either.

I read a bit about Brueggers (our local bagel joint) at Chowhound. Some people say they're boiled, some say steamed - so I'm not sure. The majority of the posters felt that Brueggers weren't terrible, so I feel kind of good about that.

I saw them being made - the one downtown on 6th has a window to see the baking. They definitely put the bagels into boiling water first.

Those bialys look great, Fuzzy. I also miss whitefish salad and decent bagels, let alone bialys. I live in the south bay and we have House of Bagels which are decent enough. I have not been impressed at all with "Noah's Bagels" or Posh Bagel. (Don't know if you have them in SF).

About my own baking, I recently bought Joanne Chang's "Flour" and made her homemade oreos. They were really good. There's a recipe for pastry cream filled doughnuts that look great. I need the time though, since the first rise is 15 hours in the fridge.
