Post subject:  what I need to make

As some of you know we are headed to NYC tomorrow & will be back on sun. I have stuff in my frig that I need to cook up. Nothing can be frozen as most of it was. Other than soup - which I will make - what are your ideas for this stuff? I can take some things to my neighbor, but they have twins that are 1 1/2 & don't have a lot of spare time to cook, so I only want to take them cooked food.
This is what I have:
a 4 1/2lb chicken
quite a bit of broccoli
edamame
about a pint of canned tomatoes
leftover mashed pots which I will probably use to thicken soup
about 8 oz of mushrooms
fresh asparagus
a bag of salad

Of course celery, carrots, onions & the usual spices
this will be fun! put your ideas here.

One giant stir fry with the chicken (boned and skinned), broccoli, asparagus, mushrooms, edamame, mushrooms, and yes, even the lettuce (depending upon what kind it is).

Not the most original, but definitely a tasty way to use (much of) it up. The leftovers would make good road food.

Braise the chicken in the tomatoes, serve with broiled asparagus and make broc. soup.

Kathy,

Another thing besides a stir-fry, which can have everything but the kitchen sink in it, is a Thai curry. I have yet to make a Thai curry I didn't like, that is, since I started making the pastes myself, and I have put countless items in them.

If not a stir-fry, sounds like stew to me. A sort of pseudo-Brunswick Stew, if you're willing to shell the edamame.
