I made this last night with 6 skin on, bone in, chicken thighs. It takes about 20 minutes to prep and 20 minutes to cook. IT IS DELICIOUS :!: :D

It looks wonderful. I have all the ingredients and chicken thighs defrosted I was going to use for a CI test recipe but need to go get mushrooms for it. I will make this instead. Thanks.

Due to our low carb diet I eliminated the chick peas (which we love...) but I did not change anything else.

I made this and it was really good even though I messed it up. I used my Cuisinart mini prep to do the onion, garlic, ginger and turned diced tomatoes into crushed. I thought I'd defrosted thighs, but they were huge drumsticks (8) so I went with that. Didn't have enough Spinach from our garden, so subbed some parsley (Steve had taken all the chard and kale for his green drinks). I did have all the spices and for once they were all fairly fresh. I was not sure about which kind of paprika, so I used mostly Hungarian sweet with a couple of shakes of Spanish.

The bad, it cooked way too long. I didn't hear the timer so it was burnt in the bottom by the time I got to it. Still what remained was really tasty. Had seconds today and it was even better.

I'll be making this again soon with boneless, skinless thighs, since I hate soft skin, and boning chicken after it's cooked. I'll also make sure to have enough greens (thinking I'd prefer chard over spinach). I used my 10 qt Fagor and it would have been fine in the 6 qt. Presto so I'll do that next time. Noisier so easier to tell when full steam and I won't take a nap while it cooks lol.

Great recovery! I don't know how many more things could have gone sideways...it might rival Fuzzy's kitchen mis-adventures and yet it turned out :D
We enjoyed some leftover sauce by simmering some 16/20 size shrimp for a few minutes - very wonderful as well!
It goes well with an older Australian shiraz :lol: :shock: :)
