Mayonnaise isn't a unique technique...after all, it's pretty much just fat.

Yeah, but it sometimes tastes mayonaissy in baked recipes that use it. I made a chocolate cake once (one of those crazy cake recipes) and it overwhelmingly tasted of mayonnaise, so I've been wary ever since.

Carey,

I'm not a big fan of using mayonnaise in this way, but if you want to try the biscuits (or a chocolate cake for that matter) and don't want a mayonnaissy taste, make your mayonnaise from scratch. Not sure it would solve the taste issue, but it's an idea.

Made these last night...quite good. One note of correction, don't use a 1¼ cup measure. I think that is a typo.

Amy,

After thinking on it for a bit, I began to suspect that given how long ago this would have been, I must have been in grad school at the time...and it is more likely than not that I was using some random no-name mayonnaise that may have been edging past the best before date but not yet failing a sniff test rather than a fresh tub of Hellman's. Might explain the strong aroma I remember there being....
